Addition of blue pea flower (Clitoria ternatea L.) extract increase antioxidant activity in yogurt from various types of milk

Blue pea flower (Clitoria ternatea L.) is known as the source of anthocyanin and has potential a natural blue dye. The present study aimed to determine effect additional (BPFE) yogurt from various types milk. used dried flowers, extracted with water in 3:1 (g.L-1) ratio, at extraction condition 60 ˚C 45 minutes. fermentation was processed by adding BPFE (A) liquid skim milk, (B) ultra-high temperature (UHT) (C) pasteurized (D) UHT milk powder, (E) powder. Then, starter added all samples, evenly mixed incubated for 24 hours 37 ˚C. five different make plain also same method without addition BPFE. antioxidant activity color intensity are evaluated investigate yogurt. result showed that increases Skim highest (437.04 ppm) values L*, a*, b* 37.35; 2.02; -1.32, respectively. Clitoria ternatea root extract enhances acetylcholine content in rat hippocampus.

Treatment with 100 mg/kg of Clitoria ternatea aqueous root extract (CTR), for 30 days in neonatal and young adult age groups of rat, significantly increased acetylcholine (ACh) content in their hippocampi as compared to age matched controls. Increase in ACh content in their hippocampus may be the neurochemical basis for their improved learning and memory.
